The study focuses on the impact of drying Alpinia zerumbet leaves on the properties of their essential oils (EOs), utilizing mathematical models to analyze drying kinetics. Results indicated that drying at 45 °C yielded the most effective EOs, showcasing superior antimicrobial activity and low toxicity.
